Rice Pudding
Pressure Cooker Rice Pudding!
What you need:
1/2 Cup arborio rice
1 Cup water
2 Tablespoons of demerara sugar (you can substitute for regular cane sugar or brown sugar)
pinch of salt
pinch of nutmeg
pinch of cinnamon
For topping:
3 Tablespoons half n half or cream
pinch of cinnamon (optional!)
I used my 2 qt. pressure cooker and made the simplest rice pudding for two! Add all ingredients into pressure cooker and select “rice” button for a preset of 8 minutes on high pressure. I did the quick release method and stirred in the half n half and more cinnamon. This would be a perfect time to add raisins or coconut milk or anything else you love in rice pudding. It is less sweet than traditional rice pudding so if you prefer it a bit sweeter, just add another tablespoon of sugar. It’s delicious warm and I’m looking forward to trying it after dinner tonight once it has chilled in the fridge.
*UPDATE:
Before you put the finished rice pudding in the fridge, stir in 3/4 cup of milk. The rice will continue to absorb some liquid as it cools, and this will help it stay creamy!
