Fudgy Gluten-Free Vegan Brownies
I love brownies. I like them fudgey, gooey, and more bitter chocolately than sweet — these are so delicious. I made them GF and vegan because I love experimenting with GF flours and ways to bake without butter and eggs. I have worked for so many GF clients and making delicious baked goods is critical. PLUS you get to eat the batter without any concern from raw eggs ;)
What you need:
7 ounces semi-sweet chocolate
6 Tablespoons avocado oil
3 Tablespoons ground flax seeds (I use my coffee grinder for this)
1 cup strong brewed coffee
3/4 cup unrefined coconut sugar
1 1/2 cups oat flour
1/4 cup unsweetened cocoa powder
2 Tablespoons tapioca flour
3/4 teaspoon kosher salt
Preheat oven to 350 degrees and line an 8”x8” pan with parchment paper.
Add the chocolate, oil and flax to a small sauce pan and put on low heat, continually stirring until chocolate has just melted. Add coconut sugar and stir until dissolved. Stir in coffee and remove from heat.
Mix the rest of the ingredients in a large mixing bowl. Add the warm chocolate mixture and stir until completely incorporated. I use a hand mixer but you can certainly just whisk everything together. Pour into the parchment lined pan and bake for 20 minutes. Wait (if you can!) before cutting into the brownies until they are cool. They will be very gooey!
