Walnut Cookies (gluten free!)
This recipe is my #1 favorite cookie recipe. The cookies are SO delicious but because they are also healthy, my family enjoys them any time of day (including for breakfast!). Also, because they are vegan, you can eat the raw cookie dough, which is the best part of baking cookies, right?
The recipe is easy and freezes well, too!
What you need:
2 overflowing cups raw walnuts
1 cup real maple syrup
2 1/4 cups old-fashioned oats, divided
1/4 cup any gluten-free flour (almond, buckwheat, oat are all great options)
3 Tablespoons unrefined coconut oil, melted
1 tsp almond extract
1 tsp kosher salt + more flakey salt for topping
1 cup chocolate chips or chunks
Pre-heat oven to 350. Place walnuts in food processor and mix until ground. Add the rest of ingredients (with the exception of 1/4 cup oats and the chocolate chips) and blend until incorporated. Then pulse in the 1/4 cup oats and the chocolate chunks. Spoon out dough onto baking sheet and bake for 5 minutes. Remove from oven and gently push down on cookies with a metal spatula and sprinkle flakey salt on top. Place back in oven and bake for 2-3 more minutes. They will look undercooked but that’s what you want. Let them cool (if you can wait) and enjoy!
